MUTTON RICE:
Cut mutton in small pieces.Heat oil in a shallow
pan and fry onions till golden.Add tomatoes and cov
the pan to soften them.Stir-fry till oil seperates.Add
mutton,seasoning and a little water and cook on slow
fire till tender.Add boiled rice and mix with long
tined fork so as to keep the rich granules whole.Put
in a casserole dish and bake for 15 mins.in a modeatly
hot ovn till is fully cooked.
CHICKEN RICE:

Cook garlic and onoins in butter till soft.Add
sashed and drained Double elephant Brand Rice and
fry again till rice is transparent.trim and chop
mushrooms and add to rice with stock and
seasoning.Bring to a boil, stire well and transfer
into thecasserole dish and cook in a preheated
moderate oven for 30 mins.Now take out the
casserole, mix chicken pieces and return to the
oven for another 20 mins.or till liquid is
absorbed and rice is flully and tender. Serve in
the casserole dish itself. |

LEMON RICE:
Boil and powder fenugreek seeds. Heat a little
oil, add turmeric and fenugreek poeders. fry and add
to rice. Mix well and keep aside. Heat the remaining
oil and fry split cashewnuts till golden. Remove and
add mustard seeds, asafetida, two types of dals,
broken red chilies and fry till brown. Add curry
leaves and take off the fire.
PEAS PULAO:

Shells peas. Wash and soak for 1/2hr.Slice green
chilies. Heat ghee, fry and remove raisins and
cashew nuts. Fry the onions till crisp and brown.
Remove and keep aside. In the same ghee splutter
cardamons, cloves, cinnamom, cumin seeds,
peppercorns and fry ginger and chilies. Add peas
and fry for 3-4 mins. Then add drained rice and
fry for 3mins.or til rice changes color. Add
seasoning and enough water to come upto 3 cmss
above the surface of the rice. Put the lid and
give a rapid boil till most of the |

water is gone and air bubbles can be seen on the
surface of the rice. Reduce heat and allow to cook
for another 10-15 mins. |
